Spring CSA – Week 5
Thank you all for being apart of our Spring CSA share. It has been so fun meeting our new members. The spring is a hectic time and often comes with hard to predict weather patterns: heavy rain, random cold snaps, and the odd 80+ day. These conditions makes growing very hard in the spring but we love that our CSA members take the risk with us! We look forward to having you apart of our Summer Share.
For this last week of the Spring CSA share, we offer you the following;
· Mustard Greens
· Lettuce Head
· Broccoli Raab
Pick up a pint of Arethusa ice cream and make your own rhubarb compote! Perfect as a sauce for ice cream, a yogurt topping or spread on French toast, this rhubarb sauce is simple to make, with just 3 ingredients and little water - no special equipment needed:
Slice your rhubarb into ¼ inch thick chunks. For every 2 cups of chopped rhubarb, you'll need ¼ cup sugar (or sugar substitute), ½ teaspoon salt, and ¼ cup water. Add rhubarb, sugar, salt and water to a large saucepan, combine all ingredients, and bring to a boil. Reduce heat to medium to simmer about 10-15 minutes stirring occasionally. When rhubarb is tender, use a spoon to mash it up until you have a thick rhubarb sauce. Don’t skip the salt - Rhubarb is not just incredibly sour, it also has a bitterness to it. Salt naturally counteracts the bitterness, while the sugar counteracts the sourness.
Summer Share add ons This year we have though of not doing add on shares due to the lack of involvement in past years, instead offering what we have in the farm store: milk, cheese, ice cream and bread for additional purchase. For those of you who are new, an add on share is either milk, cheese, ice cream and or bread. You purchase all of it ahead of time just like a CSA and pick up on Fridays with your CSA share. If you feel strongly for add on shares please email in so we can get an idea of how many would be interested.
